Thai Chicken Cashew Nuts Recipe (ไก่ผัดเม็ดมะม่วง) - Local Thai Style

The popular Thai dish that is everyone’s favorite and is on the menu in most Thai restaurants, is stir fry chicken cashew nut (ไก่ผัดเม็ดมะม่วง). The combination of the nutty, meat and vegetable with chili paste is offering one of the unique combined tastes.
Thai Chicken Cashew Nuts Recipe (ไก่ผัดเม็ดมะม่วง)
Ingredients (For 4)
300 g. chicken thigh, take off bones
2 tsp. soy sauce
2 tbs. all-purpose flour
2 cups vegetable oil
½ cup fried cashew nuts
5 fried dried red chili
2 ½ oyster sauce
1 tbs. soy sauce
2 ½ tsp. sugar
1 tsp. chili sauce
1 red goat pepper sliced (or other kinds of red chili if this is unavailable in your country)
1 bell pepper sliced into a rectangular shape
3 chives, sliced around 1 inch
*Optional to add vegetables that you like such as carrots- why not? :)
Directions
Slice chicken thigh into bite-size pieces. In a mixing bowl, marinate the meat with soy sauce. Add in all-purpose flour, sprinkle a little bit of water, and then mix the ingredients.
Add oil to the frying pan and turn it on medium heat. Fry the chicken, and stir the meat regularly so that the meat doesn’t stick together. Stir until the meat looks golden, and set aside on the cooking tissue to absorb the oil or tray.
In the ingredient-prepping bowl, combine the fried chicken, cashew nuts, and chili together. Then add in oyster sauce, soy sauce, sugar, chili sauce, and red goat pepper. Stir the ingredients together.
Prepare the pan and turn on the stove to medium heat, add 3 tbs. of vegetable oil from the previous fried chicken session. When the oil is hot, add onion and stir until cooked. Add the ingredients from the prepping bowl. Quickly stir fry until the ingredients are mixed together. Add in chives, and stir all the ingredients together. Turn off the heat.
Serve the stir-fried chicken cashew nuts on the plate. Recommend eating it with jasmine rice.
