What is Northern Thai Sausage (Sai Ua ไส้อั่ว)?

“Sai” ไส้ means intestine and “Ua” อั่ว means to stuff in Thai. The Lanna sausage is packed with various types of herbs, spices, minced pork meat, and curry paste. It’s so flavourful and aromatic that you will truly enjoy it!

Locals eat this dish throughout the day, for breakfast, lunch, and dinner, with sticky rice (khao-niew ข้าวเหนียว), chili paste (nak-prik น้ำพริก), steam vegetables and fried pork skin (kab-moo เเคบหมู).

There are so many Sai Ua stalls around the Chiang Mai area, you can easily find them. My favorite place for Sai Ua is Sai Ua Kao Bang Kham ไส้อั่วเก๊าบ่างขาม at Mae Hia fresh market (ตลาดสดแม่เหียะ)

What I like about this Sai Ua Kao Bang Kham ไส้อั่วเก๊าบ่างขาม is the richness of flavor of spices and herbs (such as dried chilies, garlic, shallot, lemongrass, bergamot skin, galangal, turmeric, coriander roots and seeds, cumin), packed with the meatiness of minced pork. If you like a little spicy and peppery taste this is the place for you to experience the best Northern Sausage in Thailand!

The place has been open for more than 20 years. When you enter the Mae Hia fresh market you will instantly smell the delicious aroma that will make you very hungry!

How to eat and buy Sai Ua ไส้อั่ว?

You can buy the whole Sai Ua sausage pack (½ kilo) or a small portion to try such as 100 g. Don’t forget to try eating it along with sticky rice (khao-niew ข้าวเหนียว), crispy pork skin (kab-moo เเคปหมู) and with green chili paste (nam-prik-noom น้ำพริกหนุ่ม) local style!

The price for Sai Ua Kao Bang Kham for ½ kilo is 225 baht (as of Jan 10, 2023, price is subject to change). For sticky rice, it depends on the amount that you want. You can order it for 10 or 20 baht.

They ship nationwide if you want to buy loads and don’t want to carry the sausage around while you travel.
